This quick and easy Paleo Maple Chipotle Ketchup is the perfect dip or topping for so many of your favorites! Serve with burgers, chicken, baked fries, or as a dip for roasted veggies. A low FODMAP version makes it easy to digest. Gluten free, Paleo, Vegan.

My post on Monday about my kids eating personalities got me thinking about ketchup. I’m sorta like “meh” with ketchup. I’ve never especially loved it, and certainly not the way I love my homemade mayo! But, I was thinking about ketchup, and when I think about something like that it usually means a recipe will be coming along soon. And like with most of my recipes, it’s a selfish one. If I’m going to put the time and effort into something it had better be something I’m happy to see sitting in my fridge when it’s all over.
I experimented and consumed so much of this stuff in the process of creating it that I’m surprised I still wanted to eat it once it was done. Since it was for me, I wanted to make it delicious as well as IBS friendly which meant no onion and garlic. A challenge, yes! As you guys might already know I’m kind of a spice wuss, so the “chipotle” part of this adds subtle spice without being overpowering. However, if you’re going for a bit more heat you can easily add a little more Chipotle powder to this.
This week I’ve eaten it with meatloaf (recipe next week!) as a burger topping and a dip for my yuca fries. That reminds me I’ll also have to give you the recipe for the yuca fries I’ve been making – they are awesome!
Maple Chipotle Ketchup {Paleo & Low FODMAP}

Maple Chipotle Ketchup - Paleo & Low FODMAP

Ingredients
- 6 oz organic tomato paste
- 2 tbsp pure maple syrup adjust for you sweetness preference
- 2 tbsp raw organic apple cider vinegar if you are sensitive to this substitute white vinegar
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp chipotle chile seasoning I used McCormick Gourmet Collection - go up to 1/2 tsp for more heat
- 2 tbsp water
- *1/2 tsp onion powder
Instructions

In a bowl or tall container, combine all ingredients and mix well by hand. Add a bit more or less water to achieve the "dipping" texture you want.

Use as a dip or topping for roasted veggies and veggie "fries", burgers, meatloaf, or really anything you want. Store in an air tight container in the fridge. Enjoy!
Recipe Notes
*The addition of onion powder will make this no longer low FODMAP, however, if you can tolerate it, it's a great addition to the recipe!

Agree the store stuff is meh, even the organic which tastes the same to me. You can play around with this and make it less sweet pretty easily. Hope you try!
