Paleo and Whole30 compliant, simple to make.After making my carrot cake a couple of weeks ago, I started to get all obsessed with eating carrots.  I’ve never been much of a raw veggie lover – roasting just brings the flavor out so much better, and so if I’m eating veggies, they’re almost always roasted or sautéed.  Plus, adding fat and salt ( plus whatever other flavors you’re into) makes anything taste better.
My beloved carrots (as of recently, at least) are no exception! Â Every time I roast carrots – whether into “fries” or to put in a hash, I wonder why I’m not doing it more often. Â The answer to that is 1.) I forget how much I like them and 2.) I forget to buy them. Â Unlike plantains and sweet potatoes – which are always hoarded somewhere in the kitchen or dining room – carrots (at least the non-baby kind) are the forgotten.
Yes, maybe it had to be a CAKE that reminded me about how versatile and delicious they can be, but even still, I’m happy with the direction this recipe took. Â This roasted carrot, bacon and kale hash is a recipe you can make as a side dish or eat for breakfast with fried eggs, just as you would a sweet potato hash. Â It’s lower in carbs but just as robust in the flavor department, and yes I just wrote the word “robust”, and yes, I’m sticking with it.
My goals for this recipe were as simple as it is to make – savory veggies with crispy bacon, and oh, yes, I wanted to keep it low FODMAP as well (I’ve moved away from low FODMAP but I realize many readers still want this option.)
I DO wind up missing that onion-y flavor that you get from, well, onions, but to keep it low FODMAP we’re using scallions added right at the end. Â By the way, the combination of bacon and scallions is ALWAYS a good thing to add to nearly anything!
Lastly, this recipe is also Whole30 friendly and ready in 30 minutes, requires no fancy kitchen gadgets and the leftovers reheat very well. Â If you are following the Whole30, I highly recommend trying out the sugar-free pork bacon from U.S. Wellness Meats – it’s my family’s favorite.

Roasted Carrot, Bacon & Kale Hash {Paleo & Whole30}
Roasted Carrot, Bacon & Kale Hash {Paleo & Whole30}
Ingredients
- 1 lb carrots or 3 cups peeled and diced
- 1/2 Tbsp cooking fat avocado oil, coconut oil, olive oil, etc.
- 8-10 slices nitrate free sugar free bacon
- 1 small bunch kale - or 2 large handfuls roughly chopped
- sea salt and pepper for roasting carrots
- 1/2 tsp paprika or smoked paprika optional for roasting carrots
- Thinly sliced green onions for garnish
- 2-4 egg fried, optional*
Instructions

Preheat your oven to 450 degrees, peel and dice your carrots. In a large bowl, toss carrots with cooking fat, salt, pepper and paprika and spread out in a single layer on a large parchment lined baking sheet.

Roast in the preheated oven for 15-20 mins until soft and browning, meanwhile cook your bacon and kale.

While the carrots roast, cut the bacon into bite size pieces and preheat a large deep skillet over medium high heat. Add the bacon and cook, stirring to evenly brown.

Once the bacon is 3/4 of the way done, drain all but one tbsp of the bacon fat (you can save for another use if you want) and add the chopped kale to the skillet, stirring to coat, add a sprinkle of sea salt to taste.

Lower the heat to medium/low, Cover the pan and cook for 2-3 minutes until kale is softened and bacon is fully crisp. Remove from heat and add the roasted carrots to the skillet, stirring to combine.

Fry eggs if desired to top, garnish with green onion, serve and enjoy!
