Make this your new go-to grain and dairy free cupcake recipe and you’re set for life! These Paleo Double Chocolate Frosted Cupcakes with Chocolate Ganache are soft and moist with great chocolate flavor and a thick, creamy icing. Paleo with a nut free option.
It didn’t occur to me until just now that my timing on these with Valentines Day next week was pretty spot on! Go me. These were not intended as a V-Day treat but rather for Adam’s birthday, which was earlier this week. Between that and the snow day we had there was no excuse NOT to try my luck on a chocolate cupcake recipe. Paleo double chocolate cupcakes? Don’t mind if I knock myself out trying.
Do you know why these are special? Because the icing is magical. You WILL have extra and you WILL freeze it to make chocolate candy. Really, you can’t not do this if you make this recipe. It’s chocolate ganache heaven.
I just had to get that part out of the way because it was a really exciting light bulb moment for me when considering what to do with my extra icing. Not that anyone would actually get MAD at me if I left them with some extra icing and no instructions. You wouldn’t, would you? In any case, you will have instructions if you choose this route!
Speaking of V-Day, is everyone excited for it? I’m pretty sure the only reason I’ve ever been excited for this holiday is the whole chocolate theme. I dislike receiving flowers (not my thing plus a hassle to keep them alive) and I am also one of those women who will say “PLEASE! For the love of God, don’t get me anything!” and it probably only took one time of getting me something for Adam to realize that I actually mean this for real. It is not a trick. If you must get me something, make it some good dark chocolate that’s not too expensive and call it a day. I promise that I will do the same for you.
Paleo Double Chocolate Frosted Cupcakes (Nut-Free Option)

Ingredients
- For the Cupcakes:
- 3 eggs
- 1/2 cup canned full fat coconut milk
- 1/3 cup coconut oil melted
- 1/4 cup pure maple syrup
- 2 tsp pure vanilla extract
- 1/4 cup coconut flour
- 1/3 cup unsweetened cocoa powder
- 3 tbsp arrowroot powder tapioca would work as well
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- Pinch salt
- For the Ganache Icing
- 2/3 cupEnjoy Life mini chocolate chips or other dairy free choc chips
- 2 tbsp full fat coconut milk thick part from the can
- 1 tsp pure vanilla extract
- *1/4 cup maple almond butter I used MaraNatha
- *For a nut-free option you can omit the almond butter or replace with 1/4 cup coconut or sunflower butter if you wish.
Instructions
-
Preheat your oven to 350 degrees. Make sure your wet ingredients are at room temp to start, and prepare a cupcake pan either will liners or by greasing the cups with coconut oil.
-
In a large bowl, whisk together the eggs, coconut milk, melted coconut oil, maple syrup, and vanilla extract until well combined.
-
In a separate medium bowl, combine the coconut flour, cocoa powder, arrowroot powder, baking soda and powder and salt.
-
Slowly whisk the dry ingredients into the wet, and then use an electric hand blender or whisk to make the batter smooth, if needed.
-
Fill 10 cupcake liners/cups about 3/4 full (they won't rise much) until the batter is used up. Bake in the preheated oven for 20 minutes, or just until a toothpick inserted in the center of one comes out clean. After a minute, remove the cupcakes from the pan and cool on a wire rack.
-
To Make the Ganache Icing:
-
In a small saucepan over very low heat, combine the icing ingredients until melted and smooth. Remove from heat and let cool.
-
When the cupcakes have cooled about halfway (they can be a bit warm still) spoon icing evenly over each cupcake. The icing will become more solid as it cools but will still be creamy at room temp.
-
If you have extra chocolate icing, pour the remainder into cupcake liners about 1/4 of the way, and put in the freezer. Once they're solid, you have a chocolate almond butter cup!
What’s your favorite part of Valentines Day?
Have you ever told someone NOT to get you a gift when you actually wanted one?
What’s your favorite chocolate candy?
Have a fabulous Friday and enjoy your weekend!

These look delicious! I never turn down a present and I especially like thoughtful gifts. I used to love Godiva this time of year but honestly haven’t even had it in forever! I see they have a ton of new truffle options though, I should try it out again.
Godiva! Used to have it every v-day since my mom would get it for me and my sis. Kind of miss it, so dangerously good!
Yum! These look delicious & I love all the ingredients too. I never turn down a muffin or cupcake!
It’s so cool what you can do with simple ingredients!
Great. Now I want double chocolate cupcakes for breakfast. Thanks.
You could probably justify these 🙂
Those look so good! !
No. .. that’s why Josh and i get along so well ha ha. I tell him exactly what i want, and he does a good job at delivering! 😉
Have a good week end!
Sounds pretty perfect to me! Enjoy your weekend!
Sooo chocolate for breakfast is perfectly acceptable, right? Because it’s 6:30 AM and I want one of these 😛 I’ve never been huge on Valentine’s Day, but I do appreciate a well thought out gift, and I’m a fan of flowers too… even if I suck at keeping them alive 😆
I felt that way with your post today x 100! I’ll never get the hand of keeping flowers alive 🙂
I would rather do something to celebrate than get a gift. However, I don’t even like going out to dinner on Valentines Day because restaurants are so crowded. We ended up celebrating the first weekend in March last year.
I can’t wait to try these cupcakes- especially the frosting!
Agree about crowded restaurants! No need to celebrate exactly on the day of anyway. The icing will not disappoint!
Lol…one must be very careful with that! If I say don’t buy me anything than I truly mean it. You shouldn’t tell someone don’t get me anything and then be upset if they take you at your word. These cupcakes look fabulous! Happy belated birthday to Adam and enjoy the weekend!
It’s either nothing or very specific (in which case I’ll just get it myself thanks!) thank you and enjoy your weekend as well!
TOTALLY RELATE. I don’t like flowers either. Chocolate? Sure. Absolutely. I’m not a fan of Valentine’s Day because I don’t like all the pressure. I’d rather be a rebel and have wild passionate you-know-what with lingerie and chocolate sauce every other day of the year and just lounge around in my granny panties every Feb.14th. Rawr.
I agree that feb 14 being in the dead of winter and all doesn’t really put me in the v day mood. Chocolate mood though, maybe 🙂
Can’t wait to try these. I am certain mine will not look so pretty.
I don’t need huge gifts, but I do like a little something to feel appreciated. I like to have some time with hubby. I actually really enjoy putting together little packages of stuff for my kids. I leave put them out on their spots on the table so they have them when they wake up in the morning. My mom always did this for us. I guess in a way until they have their own Valentine, they get something from their Mom:)
That’s so cute! I do think of valentines day being more kid focused and of course my kids love it as well. My mom also always got me chocolate 🙂
I love chocolate–these sound fantastic. And every year I tell my husband not to get me anything. Every year he ignores me and does it anyway!
Sounds like it’s an unspoken rule for you guys! Enjoy the weekend 🙂
