Now, I know there are a lot of “ultimate” grain free and paleo chocolate chip cookie recipes out there. I wouldn’t want the paleo police to catch me using the word unlawfully, so here’s my disclaimer: I’ve tried many paleo cookies recipes. They’ve all been pretty good, but, this is my favorite.

So yes, they are my ultimate and the children loved them as well. And let’s be real about who I’m baking for anyway – if three kids who still eat non-paleo cookies say these paleo cookies are the best, you trust them. Kids are extremely harsh food critics as many of you know.
Gosh I’m super defensive about these cookies today! What’s gotten into me? I need to chill out – cookies are meant to be fun and tasty and that’s really it.

In other news, I realized this morning while running that it was at this exact point in my training for Philly last year, that my knee started hurting. I just like to look for ways to jinx things that are going well for me – I can’t help myself.
Anyway, I did one of those superstitious things in my mind where you go “okay, so if I make it to the middle of next week with no pains, I’m good to go for the rest of training.”
As if life really works that way. I’ve been doing this with all sorts of things that scare me since I was 5 years old and I can’t quit it!

It’s comforting I guess, and even though it sounds negative it’s actually a way to relieve myself of anxiety. Because once I “pass the point” – that dividing line of time in my mind – I truly believe things will be okay.
And then even if they’re not, I wasn’t worrying about it, so I can deal with whatever comes on in a mildly neurotic fashion, which for me means I’m doing well.

Ultimate Soft and Chewy Paleo Chocolate Chip Cookies

Ultimate Soft and Chewy Paleo Chocolate Chip Cookies

Ingredients
- 1 egg room temp
- 1/2 cup smooth almond butter
- 2 tbsp coconut oil melted and cooled to almost room temp
- 1/3 cup coconut sugar
- 1/4 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1 cup blanched almond flour
- 3 Tbsp coconut flour
- 1/2 tsp baking soda
- 1/4 tsp fine grain sea salt
- 3/4 cup dark chocolate chips or homemade paleo chocolate chunks*
Instructions

Preheat your oven to 350 degrees and line a large cookie sheet with parchment paper.

(You can mix the dough by hand, or use a stand mixer or other electric mixer.) Beat the almond butter, coconut oil, coconut sugar, maple, egg and vanilla together until smooth. In a separate bowl, combine the almond flour, coconut flour, baking soda, and salt.

Mix the dry ingredients into the wet until a sticky dough forms. Add chocolate chips at the end and stir with spatula or spoon. You can chill the dough for up to 5 minutes if it's too sticky to scoop onto cookie sheet.

Using a medium cookie scoop, scoop dough evenly onto parchment lined baking sheet to make 16-18 cookies. Cookies will spread a bit so leave room between each one.

Bake for about 10-12 in the preheated oven, or until cookies are set (they won't really brown. If you want crispy/chewy cookies, you can bake up to 12-14 mins)

Remove from oven and allow to sit on cookie sheet for 5 mins, then carefully transfer to wire racks to cool completely, using a wide spatula. Enjoy!

I found them greasy tasting and texture. Possibly due to the egg being too cool which solidified the liquid coconut oil? I am going to try again with appropriate temperature egg but also cut the amount of oil and use unsweetened applesauce and will check back. I am cooking from your website at least one day a week and find it such an amazing resource for clean eating. Cheers

I have been looking for a good paleo recipe for soft chocolate chip cookies and these are GREAT! I used tapioca instead of coconut flour and erythritol/monk fruit sweetener instead of coconut sugar and they turned out great. THANK YOU
I was about to make these but I just realized that the amount of chocolate is almost the amount of almond flour. And even while I plan to use a bar that was 90% dark chocolate I still think that is way too much sweetness, and I wonder if I only use 1/3 cup of that will mess up the recipe. Why do much chocolate? This is why I can’t understand store bought chocolate chip cookies or chocolate chip cookies made by someone else. My mother used to make them just for me with very few chocolate chips. Otherwise it’s just sickeningly sweet. Why not just eat a chocolate bar? I though the goal of paleo was to reduce sugars overall.

This recipe is soooooo good! I altered a few things but I like my cookies with as little sugar as possible. I used 1/2 ghee 1/2coconut oil, 1/2 the sugar/sweetener(lakanto monk fruit sweetener instead of coconut sugar) and 1/2 the maple syrup and lilly’s chocolate chips. They are the best gf cookies around!

So, I’d love to try these, but I am sugar-free (like any kind of sweetener that raises the glycemic index). I will use monk fruit to replace the coconut sugar (you have to use 1/2 as much due to the sweetness factor), but what can I do to replace the maple syrup since it’s a liquid? Could I just use more monk fruit? By the way, if you’ve never used it, it bakes and tastes just like sugar!
These are the best cookies! I found them when I first started the Paleo diet and was craving a treat. I make them about once a week now! I have tried different variations like using natural peanut butter, adding in cacao, or using unrefined coconut oil…but in my opinion, the original are the best! This recipe is a keeper!
