This is one super easy and quick weekday morning Paleo breakfast you’ll keep coming back to!  A single serve Plantain Apple Chicken Sausage Hash that’s just as delicious as it is nourishing, with sweet caramelized plantains and apples, savory-sweet chicken sausage, and eggs cooked to your preference!  Dairy free, Paleo, Whole30 approved.

Plantain, Apple & Chicken Sausage Hash @paleorunmomma #Whole30 #paleoThis week has been filled with go-to comfort food for me, and lots of it!  Interestingly, I haven’t been craving treats or sweets, but rather just filling, nutrient dense food that’s relatively easy to cook.  It’s funny how I seemed to crave more treats during the week leading up to the marathon, and now that it’s all over I’m craving healthy, whole food.

And so was born this breakfast hash.   Okay, clearly I eat this sort of thing all the time, so it’s not as if we’re breaking new ground with this recipe, but, sometimes the good, easy and quick recipes that you make a version of every day, are also the easiest to overlook or take for granted!

So, I’m bringing you this deliciously simple Plantain Apple Chicken Sausage Hash as a quick, single serve, Paleo and Whole30 friendly meal that you can make any weekday morning in the time that you could microwave oatmeal and add a banana to it.  Really, it’s (almost) that fast!  It also makes an awesome “breakfast for dinner” meal when you’re exhausted and just want to move on to the chocolate as fast as possible.

plantain apple chicken sausage hashThe secret to a quick cooking hash is most definitely not rocket science.  It’s using ingredients that ALL cook fast, chopped into the perfect size, so you are basically just browning things in a pan for 2 minutes or so.

Believe me, I have mad love for sweet potatoes (especially the Japanese variety) and cook them in a hash with bacon pretty often, but they do take longer to soften and cook through, so some busy mornings it’s just not possible.

But, ripe plantains are different.  They are already ripe, sweet, and soft and only take about 2 minutes to caramelize into a gorgeous golden brown when cooked in coconut oil, butter, or ghee and a bit of salt.  Apples are about the same in their cooking time for a good tender/crisp texture, so they work perfectly together in this recipe!  Toss in diced, fully cooked chicken apple sausage and you have a very easy and tasty combo.

plantain, apple & chicken sausage quick hashAnd don’t forget those eggs – one or two eggs, cooked however you like, will make this the perfect breakfast.  I almost always fry my eggs because it’s quick and “low maintenance”, meaning they can hang out in the frying pan while I cook the hash next to them.  Multitasking can be challenging for me in the morning (something always burns!) so I’ve figured out a method for cooking my eggs and pretty much guarantees they don’t over or undercook.

Ingredients

  • 1/2 of a large ripe plantain (skin should be yellow/brown) cut into bite sized pieces
  • 1/2 of a medium apple chopped
  • 1 link chicken apple sausage chopped (I used Aidell's brand which is Whole30 compliant)
  • 1 tbsp coconut oil or ghee for cooking the hash
  • 1/2 tbsp coconut oil or ghee for cooking egg s
  • salt to taste
  • 1-2 eggs

Instructions

  1. Heat a small-medium skillet over medium heat and add the coconut oil or ghee.
  2. Once heated, add the chopped plantains and apples to the pan and sprinkle with a bit of salt if desired. Cook and stir to evenly brown.
  3. After one minute, add in the chopped chicken sausage and continue to cook, stirring to cook all the ingredients evenly. Adjust the heat if necessary to avoid burning. Once toasty brown, remove from heat.
  4. Meanwhile, heat a separate small nonstick skillet over medium heat, and add the 1/2 tbsp coconut oil or ghee to cook your eggs.
  5. For perfect fried eggs, I crack mine into the heated pan and allow them to fry until the bottom is crispy golden brown, about a minute. Then, I cover the pan and turn off the heat for a few minutes, so the eggs steam cook on top. This way, the whites fully cook and the yolks don't overcook.
  6. Serve alone or over baby spinach, and top with eggs. Enjoy!

    Out of the thousand different hash recipe I’ve made, I still haven’t mixed in a sweeter element like plantains or apples! And I’m having trouble finding plantains at the grocery right now, but when they come back I need to finally try it.
    This weekend I am running an 18 mile trail “race” but I’m running it at chatting speed with 3 of my girl friends so I’m very excited about a weekend with zero pressure!

    Plantains are on my still to try list, I never thought to add them to a hash in place of potatoes but the thing about time saving and similar cooking time means this will be one of the first uses!

    I’m not a fan of cooked apples, but that really depends. I’m not a fan of them in sweet things like pie 😛 But in savory or roasted and not gooey, I’m all for it! My weekend is looking to be rather boring…not sure if that’s good or bad 😛

      I love throwing apples in savory dishes like my butternut apple Thanksgiving stuffing! It has sausage in it but would easily be good without. I’m also thinking of making a stuffing with yuca, I think it might be perfect 🙂

    I’m really starting to fall in love with plantains lately. They’re relatively cheap for how many servings you can get by just pan sauteeing them! The flavors of apple with sausage sound fantastic with them.

    I like the addition of a healthy carb to eggs….I am definitely a recovering bread addict, and I think the plantain and sweet potatoes really help satisfy me. Great recipes! Count me in!

Happy Monday!! I have a new IG-only recipe for you Happy Monday!! I have a new IG-only recipe for you today that couldn’t be more perfect for a Monday morning (especially to kick off Valentine’s Day week 💕💕) a yummy Paleo Mocha Latte! ☕️🍫 #ADI added some @ancientnutrition collagen for more protein too. I used the plain version but you can go double-chocolate with their chocolate flavored collagen!I add their collagen protein to my coffee daily for the bonus skin and joint benefits plus extra protein 👍Here’s the recipe for the best paleo mocha latte!
Makes 2 servings
10 oz strong brewed coffee, hot (or espresso, if preferred)
1 cup almond milk, or nut pods creamer, heated in the microwave or a saucepan
2 Tbsp raw cacao powder
2 Tbsp maple sugar (or coconut sugar)
2 scoops Ancient Nutrition Multi Collagen Protein (use the chocolate flavor for double chocolate!)
1 1/2 tsp pure vanilla extract optional
Extra cacao powder or shaved dark chocolate for garnishAdd the prepared coffee or espresso, the milk or creamer, cacao powder, maple sugar, collagen, and vanilla to a blender and blend until all is dissolved, then continue to blend until frothy.  Divide between 2 cups and garnish with extra cacao powder or shaved chocolate if desired.  Enjoy!
