Banana Almond Coffee Cake Muffins {Paleo}

Is there anything better than that crumbly cinnamon coffee cake topping?  Not today!   With these Banana Almond Coffee Cake Muffins, you can have your grain free, dairy free, paleo coffee cake and eat it too, of course!  Paleo Banana Almond Coffee Cake MuffinsMy oven 100% went out with a bang.  I almost can’t be mad at it since it literally died giving birth to these Banana Almond Coffee Cake Muffins.  I will always remember these muffins as the official last food my old oven managed to turn from batter to baked.

But enough about my old oven.  Though it hasn’t turned on for a week, I’ve still managed to get by with my stove top, new dishwasher (it’s heavenly) and all the hopes and dreams I have for the new oven.  True story – I already daydreamed this morning (legitimately fantasized) as I was enthusiastically removing CLEAN AND DRY dishes from my new dishwasher, about Thanksgiving.

That’s right, you heard me, I am a crazy person who fantasizes about preparing Thanksgiving dinner for a crowd with the help of a brand spanking new oven range.  In this daydream, the oven was preheating to 400, not shutting off when it got to 315.  It was baking and roasting all my favorite Thanksgiving dishes to the ultimate crisp/tender perfection.  It was not smoking and the light was working so I could peek inside and see my food as it cooked.  Everyone was happy.

But that’s not even all!  I threw the dishwasher into this fantasy too,  because that’s my life now and I’m not joking one bit.  I think we both know what the dishwasher did in this fantasy.

Banana Almond Coffee Cake Muffins - PaleoIt’s not like I’ve gotten a new kitchen.  Now THAT would make it perfectly acceptable and normal to entertain such a fantasy about kitchen appliances.  But not for me.  I have rather simple pleasures (be they first world, but still) at this point and I’m okay with it.

I think the right thing to do though, the minute the delivery men install my hopes and dreams, hopefully by next week, is to make these muffins again.  I’ll have the guys wait of course, because surely they have the time with those 6 hour delivery windows.   They will love them.  Anyone would love these! What’s not to love about healthy grain free coffee cake?  In muffin form, which means they can go places!  So grab your ripest banana and some almond butter and celebrate your oven’s life right now!

Banana Almond Coffee Cake Muffins {Paleo}

These Banana Almond Coffee Cake Muffins have a delicious sweet cinnamon crumb top to complement a sweet banana almond butter muffin. Gluten free, grain free, dairy free, soy free, refined sugar free.

Ingredients

  • For the Muffins:
  • 1 overripe banana
  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 1/4 cup organic coconut sugar
  • 1/4 cup almond butter
  • 1 tsp organic almond extract
  • 1 cup blanched almond flour
  • 2 tbsp tapioca flour
  • 1/2 tsp baking soda
  • pinch sea salt
  • Ghee or butter to grease muffin cups
  • For the Crumb Topping
  • 2 and 1/2 tbsp ghee cold - or pastured butter if you can do dairy
  • 1/2 cup blanched almond flour
  • 1/4 cup organic coconut sugar
  • 2 and 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, beat together - with a whisk or hand mixer - the banana, egg, almond milk, coconut sugar, almond butter, and almond extract, until smooth.
  3. In a separate bowl, combine the dry ingredients and slowly add to the wet mixture until fully combined and smooth. Fill greased or lined muffin cups about halfway with this mixture and set aside while you make the topping.
  4. To make the crumb topping, combine all ingredients in a bowl and blend with a pastry blender, or combine using a food processor, until it forms a pasty/crumbly texture.
  5. Top each half filled muffin cup with the crumb topping, using all of it.
  6. Bake the muffins in the preheated oven for about 15 minutes, or until lightly browned and a toothpick comes out clean from the center of one.
  7. Remove from oven and let stand for about 2-5 minutes, then carefully transfer to a cooling rack to let cool completely.
  8. Makes about 9 muffins. Enjoy!

Is there anyone you know who DOESN’T love crumb topping?  I believe this is a universal thing that no one hates, but I could be wrong.

    Crumb toppings are one of those things that I forget that I love until I have it. Actually though, I was not a fan when I was little. I hated crumb cake because of the cinnamon! Not sure what was wrong with me. But luckily I have gotten over that. You are going to be in baking heaven with your new oven! I can’t wait to see all the new creations you come up with:)

      Oh I always loved cinnamon crumb topping! My kids love it too, a little too much actually since they fight over the dropped crumbs, who has more crumbs, etc 🙂

    It’s all about the crumb topping, for sure. My favorite crumb topping ever comes on the Entenmann’s chocolate crumb topped donuts. I am sure you know which ones I mean. I haven’t had them in years but they were the best!

    I love crumb topping on muffins! Seriously, all muffins should have it. I once had a convection oven that was really just a function on a microwave (college campus apartment life) and I spent that whole year fantasizing about a real oven.

      That’s funny! I think my microwave has a convection oven function but I’ve no clue how to use it. Maybe I should figure it out, although by then the oven will be here already 🙂

    If I had my way and my boyfriend wouldn’t break up with me, I would only eat the crumbles off the top of all baked goods haha. This recipe is amazing, I need to make it ASAP 🙂

    yes to the crumb topping! i like berry crumbles better than cobblers because i just love the crumble and have never been much for cobbler dough 🙂
    i fantasize about having a full-time maid – not kidding. and a driver. hey why not, it’s my dream right? oh shoot while i’m at it, i’d LOVE hairstylist to come over and do my hair. he/she can live here, too 😀

    If I could, I would legit just eat a bowl of crumb toppings with a spoon. Actually, I wonder if you could -just- make the topping without the muffin… because that would be brilliant. And the thought of an oven birthing muffins gives me all sorts of weird mental images 😆

    If you don’t love a crumb topping you should just move to Mars. Get outta’ here!
    I remember those (really BAD/”Unhealthy”) Entenmanns Crumb Doughnuts and my favorite part was the little crumb “cylinders” they used to top them…omg…I would pick the ones that fell off in the box and eat them. Better than the actual doughnut 😉 Hahahahahaa!

    If someone doesn’t like crumb topping, I’m not interested in meeting them. I love to add like 4 times the reccommended crumb topping on things. Sorry I’m not sorry.

    yes to crumb topping ! which for me is usually all about the butter ! my fam makes me make apple crisp each thanksgiving with tons of topping in a shallow dish so they can ignore the apples and eat the topping !

    Even just the word crumble makes you salivate… Everyone loves a bit of crunch!
    Something boring that I fantasise over – grocery shopping! I love it! I also dream about ikea shopping! Funny for someone who doesn’t actually like spending money! Haha!

      Haha I absolutely hate Ikea with a passion! That would be my nightmare. I’m not a fan of crowded and rushed grocery shopping but a day alone at Whole Foods wouldn’t be bad!

    I know this post is over six months old, but wanted to comment that my daughter made these for us over the weekend. She doubled it because we had two banana muffins and boy are we happy that we did! They’re delicious. We both agreed that all of your recipes have been winners at our house!     Can I substitute honey for the coconut sugar! I am doing the SCD diet and can only have honey as a sweetener. Also can I omit the tapioca starch ? (same reason)

    Hi! The recipe doesn’t say how much almond flour to use for the topping. It just says 1/2. How much should we use? Thanks for the great recipes 🙂

    My daughter and I made these today and they were delicious! While I love crumb topping, I also thought that the base of this muffin was one of the best Paleo baked goods that I have made! The banana flavor was not overwhelming and the texture was really light and moist (I hate that word but couldn’t think of a better way to describe it). As always, we LOVE your recipes, Michele!

I have a new IG-only recipe for you today that couldn’t be more perfect for a Monday morning (especially to kick off Valentine’s Day week 💕💕) a yummy Paleo Mocha Latte! ☕️🍫 #ADI added some @ancientnutrition collagen for more protein too. I used the plain version but you can go double-chocolate with their chocolate flavored collagen!I add their collagen protein to my coffee daily for the bonus skin and joint benefits plus extra protein 👍Here’s the recipe for the best paleo mocha latte!
Makes 2 servings
10 oz strong brewed coffee, hot (or espresso, if preferred)
1 cup almond milk, or nut pods creamer, heated in the microwave or a saucepan
2 Tbsp raw cacao powder
2 Tbsp maple sugar (or coconut sugar)
2 scoops Ancient Nutrition Multi Collagen Protein (use the chocolate flavor for double chocolate!)
1 1/2 tsp pure vanilla extract optional
Extra cacao powder or shaved dark chocolate for garnishAdd the prepared coffee or espresso, the milk or creamer, cacao powder, maple sugar, collagen, and vanilla to a blender and blend until all is dissolved, then continue to blend until frothy.  Divide between 2 cups and garnish with extra cacao powder or shaved chocolate if desired.  Enjoy!
