Is it really possible to every have enough of the addicting buffalo ranch combo?!  Heck no!  Which is why we’re having spicy buffalo bacon burgers with easy, one-and-done “dump” ranch sauce.

Perfect on the burgers, but you’ll want to put it on everything from now on – it’s that good!  Thick enough for dipping and topping but also great for salads.  I’ve made many Whole30 and paleo ranch dressings over the past several years and I have to say I believe this one is the best!

But back to the beginning – the spicy part.  I tried these burgers twice because the first time I was a bit overzealous with the hot sauce I mixed into the ground beef.

Not only were the burgers just a bit too spicy for my liking, but the burgers didn’t bind well due to the excess liquid from the hot sauce.

By mixing in less hot sauce and brushing on more at the end of cooking, you get burgers that stick and still have plenty of flavor and spice.  Plus, once the burgers are done cooking, you can brush them as liberally as you want with extra hot sauce!

As for the bacon, I just had to add it.  Burgers are all about the topping in my opinion, and thick, savory, crispy bacon perfectly complements both the spicy burgers and the ranch.

There are SO many great varieties of Paleo and Whole30 friendly, sugar free bacon out there now – which is so different than back when I started my blog.

I still really love the pork bacon from U.S. Wellness Meats, but you can easily find sugar free bacon at the store as well (Jones Dairy Farm and Applegate are two favorites) – just check labels!  A few are also Paleo and Whole30 approved and will tell you that right on the packaging.

Ingredients

Ranch:

  • 1 egg
  • 2 Tbsp fresh lemon juice
  • 2 tsp mustard
  • 1/4 cup almond milk
  • 1 clove garlic smashed
  • 2 tsp onion powder
  • 1 cup avocado oil or light flavored olive oil
  • 1 tsp dried dill
  • 1 Tbsp dried chives
  • Sea salt and black pepper to taste

Burgers:

  • 1 1/2 lbs ground beef
  • 1/4 cup + 2 Tbsp hot sauce divided, Whole30 friendly
  • 1 Tbsp ketchup Whole30 friendly
  • 2 tsp mustard
  • Sea salt
  • 6 slices bacon Sugar Free for Whole30
  • Lettuce tomato, sliced red onion for serving
  • Ranch for serving

Instructions

For the Ranch:

  1. In a tall narrow container (one that works with your immersion blendeplace the egg, lemon juice, mustard, almond milk, garlic, onion powder, and oil.
  2. Put your immersion blender in the bottom of the container and turn to high speed, keeping it at the bottom for 30 seconds. Slowly bring the blender up and then down again until the mixture is fully emulsified, thick and creamy. Stir in dill and chives, then the salt and pepper to taste. Refrigerate until ready to use.

For the burgers:

  1. Heat a large skillet over medium high heat and cook the bacon until crisp, set aside. Reserve 1-2 Tbsp bacon fat for cooking the burgers.
  2. In a large bowl, combine the ground beef, ketchup, mustard, and just 2 Tbsp of the hot sauce. Mix with your hands to combine.
  3. You can pan fry or grill the burgers. Heat your grill or skillet to medium high heat and brush with reserved bacon fat or oil. Form the beef mixture into 6 patties, and, once sizzling hot, add to the skillet or grill. Sprinkle sea salt over the uncooked tops of the burgers. Cook 3-4 minutes, flip, and cook for another 3 minutes or so or until cooked to preference.
  4. Remove from heat and immediately brush each burger with the remaining hot sauce. Serve over lettuce and tomato topped with the bacon, ranch, and sliced red onion. Enjoy!

    Thank you for such amazing recipes! My functional doctor wants me on a paleo diet and I’ve been pretty close to vegetarian for 29 years (full vegetarian for 8 of those years) so eating a burger after 29 years was a pretty big deal! These were delicious!

    How long will the ranch keep in the refrigerator in a glass jar?
