This creamy paleo tuscan chicken is a super-tasty one-skillet meal that’s perfect for weeknights and full of flavor! Boneless, skinless chicken thighs are seared and cooked with a creamy sauce packed with spinach and sun-dried tomatoes. Paleo, dairy-free, Whole30, and Keto friendly!
One-skillet dinners make my ain’t-no-time-momma heart sing. That’s a real thing, of course.
And by “heart singing” I just mean I feel approximately 15% less stressed out by the chaos of life when I know I can make dinner in just one skillet. I’m sure there’s at least a few of you ladies out there who can relate!
When there’s only one skillet needed to cook dinner from start to finish, it gives me hope that I can, in fact, make it to 9pm without a complete meltdown. Not anything to take lightly – we need these one-skillet meals.
Okay, hopefully I’ve sold you on the one-skillet thing but if not, I’m sure I will with everything else about the actual recipe.
It’s a creamy Tuscan chicken that’s totally dairy-free, paleo, gluten-free and packed with veggies! It’s relatively low in carbs as well, with the only carb source really being the sun-dried tomatoes.
If you’d like an even lower-carb keto option, you can always use fewer sun dried tomatoes.
For the chicken, I knew from the start I’d have to go with boneless skinless THIGHS, not breasts. Breasts are great if you’re “breading” your chicken but honestly they are way too dry in my opinion for anything else – even a creamy sauce.
The thighs cook almost as quickly and they have 10x the flavor, crispiness, and juiciness of the breasts. We’ll season them, sauté, and then remove from the skillet while we make the yummy sauce.
So yes – it’s one skillet only, but, you’ll need a plate of some sort. Use a paper one if you’re like me and can’t stand the thought of another dish!
The sauce itself is similar many creamy sauces I make – a combination of chicken bone broth and coconut milk, with some tapioca to thicken.
I add a little stone ground mustard and nutritional yeast as well, which, in my opinion, cuts the flavor of the coconut milk enough so that you can barely taste it.
I know many of you are sensitive to coconut flavor, so if you really want to cut the taste, you can use a bit more tapioca to thicken, more broth, and less coconut milk. But, I encourage you to try the recipe as written since the coconut flavor is really quite minimal!

Creamy Tuscan Chicken {Paleo, Whole30, Keto}
Ingredients
- 1.5 lbs chicken thighs boneless and skinless
- 1 Tbsp coconut oil plus additional if needed
- Sea salt and pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 small onion chopped
- 4 cloves garlic minced
- 1 Tbsp tapioca flour or arrowroot
- 1 cup chicken bone broth
- 1/2 cup coconut milk full fat, blended before adding if needed
- 1/2 Tbsp stone ground mustard
- 1 1/2 Tbsp nutritional yeast optional
- 1 tsp Italian seasoning blend
- 1/4 tsp sea salt or to taste
- 1/8 tsp black pepper or to taste
- 2/3 cup sun dried tomatoes roughly chopped
- 1 1/2 cups baby spinach roughly chopped
Instructions

Season the chicken with sea salt, pepper, garlic, and onion powder. In a large skillet add the coconut oil and cook the chicken thighs on medium-high heat for 5-7 minutes on each side or until browned and no longer pink in center. Remove chicken and set aside on a plate.

Add additional oil if necessary and cook the onions over medium heat until soft, then stir in the garlic and cook another 45 seconds.

Whisk in the tapioca or arrowroot, the add the broth and coconut milk. Stir to combine, then stir in the mustard, yeast, Italian seasoning, sea salt and pepper. Cook and stir over medium-high heat until it starts to thicken.

Add the spinach and sun-dried tomatoes and allow mixture to simmer until spinach is wilted and tomatoes are softened. Add chicken back to the skillet and simmer another 2 minutes. Serve over cauli rice, zucchini noodles, or with roasted potatoes. Enjoy!

I double the recipe which meant two pans, making it a bit harder. I wish there was an easier way to double or triple the recipe. So I LOVE your recipes. Your sausage sweet potato recipe is totally a staple in my house and I’ve given it to more than one co-worker all with great success. This is a wonderfully delicious recipe! I used cherry tomatoes cut in half (not grape tomatoes)because they’re juicier than sun dried. I also patted the thighs dry before sautéing in very hot avocado oil (because you can get it very hot without smoking…gives a nice brown sear to the chicken. Otherwise, followed the recipe exactly. I hate to be one of those people who changes the recipe and then comments, but I’m going to;)
I baked chicken breasts in the oven because I was in a rush (450 for 18 minutes) and I did the sauce in the skillet at the same time. I kept everything else the same and served it with basmati rice (instant pot). Originally I was going to do potatoes, but time got away from me. Anyway- the end result was chicken breasts, which I thinly sliced after cooking, with sauce on top and a side of rice that got mixed in as desired.
AMAZING! We all loved it! You couldn’t tell it was coconut milk at all. It was really good. I will probably use garlic powder in the future because fresh garlic added a sweetness, combined with the sun dried tomato sweetness that was slightly more than I wanted. But even with that, it was fabulous and so flavorful. I will absolutely make this again and again! Thank you so much.

This was so delicious. We ate it last night over potatoes. I may have let the sauce thicken up a bit too much before adding in the sun dried tomatoes and spinach but it worked out SO YUMMY! My partner ate 2 servings and that’s rare!

SO good and so easy! I’ve made this three times now and it’s one of my husbands favorite dinners. Tonight I used a Tuscan seasoning blend I found at a spice store in place of the other dry spices and added a can of black olives at the end. My husband isn’t paleo so I serve his over a bed of buttery rice and top with Parmesan. I have mine with extra sautéed spinach. Thank you for this recipe! I love your recipes, and this dish was sooooooo good! Instead of sun dried tomatoes, I roasted a pint of grape tomatoes in lotsa garlic, olive oil, rosemary, thyme s&p till they were nice and tender, and used them instead. This sauce also came out really great and full of flavor. I think I might squeeze in some fresh lemon juice right at the end, but other then that it was a huge hit!

This meal is fantastic! I have a confession – I did swap in chicken breasts. I know I know – you specifically said NOT to use
chicken breasts – but I have a mental block against chicken thighs so took the risk. And it was still delicious! I just mashed them with a mallet until they were very thin and used a meat thermometer to make sure I didn’t overcook them or dry them out. So everyone else – imagine how good it will be if you trust the genius chef and go with the thighs! Mmmm. A great whole30 option.

Overall an exceptional, full-flavored Whole30 recipe. I added my tapioca starch/ 1 Tbsp. coconut milk slurry at the end since tapioca starch loses its thickening properties the longer it cooks. I also found that I needed an additional 1/2 coconut milk. Loved the addition of nutritional yeast – nice, buttery flavor with the tang of the mustard (I used spicy brown since I didn’t have stone ground). I did half & half ghee with coconut oil so there was no coconut flavor whatsoever. Husband is not a fan of tomatoes but I thought they were great in this dish. Next time I will use red pepper pieces instead and then add some crisp bacon pieces at the end. Very versatile cream sauce. Big fan of your recipes. Thank you!

We substituted the sun dried tomatoes and used a half a can of tomato paste, about 3 ozs. It was so yummy! Of course we doubled the spinach too for added nutrition. Definitely a keeper!

Love! Really needed a few new dinner ideas. Loving the coconut milk/nutritional yeast combo to make a sauce. I omit the thickeners to do keto. So, I add stock base and omit the water. I did have to add some water in the end to stretch. I think the sun dried tomatoes absorbed a lot, they were dried in a bag not packed in oil. I used fresh basil and oregano in the sauce. I’ve been missing food I enjoy. Tastes like a real dish, not something altered.

For all those wondering – cashew cream is a beautiful substitute no changes needed – except to thin the sauce to your liking after adding. Very forgiving, I almost never use breasts (too dry), but occasionally substitute them here with good results

I know this is an older recipe so I don’t know if you will see this. But I made this today and it smelled so good and came out so tasty. I only had bone in skin on thighs so I had to cook the chicken longer. And I did not have spinach so I used zucchini noodles. It definitely didn’t look anywhere near as nice as your photos, lol. But it was delicious and perfect for a weeknight meal. I had my husband taste it who’s not on any type of diet and he said it was really good and can’t wait to have it tomorrow for dinner.

I made this last night and it was delicious! I don’t like coconut milk so I subsituted 1/2 cup of raw cashews and blended them with the remaining sauce ingredients in my blender. The sauce was delicious! I crisped up the skin on the chicken thighs and to keep it crispy I served the sauce over roasted potaoes and used the sauce to dip my chicken in. I had some extra sauce left over and it tasted amazing over roasted veggies and eggs this morning. Yum!

So I just want to put out a warning about using coconut oil on medium high heat…I have a fairly new glass stovetop in America and I set my heat to “5” (which is medium level heat; it’s not even “medium high” heat). I preheated my stainless steel pan on the level 5 heat, tossed in the 1 tablespoon of coconut oil, it melted immediately, smoked and within seconds, it quickly caught fire. Apparently the smoke point of coconut oil is 350 degrees Fahrenheit. Thankfully, the fire was quickly dealt with and everything is okay. I just wanted to impart that following the instructions to a tee might be dangerous. I would use a lower heat setting if using coconut oil, or I would use an oil with a higher smoke point like avocado oil. Otherwise, the recipe turned out beautifully and it tasted good. I restarted it with a new pan on a level 2-3 setting (low-medium heat) and it might have taken a tad longer, but it looked like the picture when it was done.

Doing Whole 30 I’m always looking for new recipes to try and I must admit, I was shocked at how much I loved this one. The coconut taste is quite subtle and overall it really worked with the other flavors. I used some ghee in place of/in addition to the coconut oil just b/c I love it, and I didn’t have Italian seasoning so I just tossed in some dried basil and thyme (realized I didn’t have oregano). Parboiled and roased some diced potatoes, roasted asparagus… even the guy said it was very tasty and he’s pretty meh about most foods. Thanks so much!

This dish is so great. I had to adapt it slightly to make it low FODMAP because of my ibs so used garlic infused olive oil instead of coconut oil and just used the herbs I had available.
