Hi guys! I’m VERY excited to share this seriously easy, delicious recipe today that happens to use some of my very favorite products. You know by now I’m pretty obsessed with creamy cashew butter (and bananas) in my recipes, and, these Strawberry Banana Bread Breakfast bars totally indulge my obsession!

Seriously, this cashew butter. Doesn’t it look incredible? I discovered my favorite nut butters years ago, actually prior to my Paleo diet, at Stop and Shop – my go-to local grocery store since we moved into our house almost 7 years ago.
Nature’s Promise Free from products leave out all the unnecessary junk you don’t need – like artificial colors, flavors, and preservatives – and are high quality and extremely affordable. I’ve been a big fan for years!

I decided to create a recipe that my whole family would love featuring Nature’s Promise cashew butter, frozen strawberries, bananas, and eggs – products we have in our house at all times!
These Strawberry Banana Bread Breakfast Bars are very simple to make, grain free, are free of refined sugar. They’re super kid friendly and easy to make ahead of time to grab for breakfast or a snack on the go.
The creaminess of the cashew butter really adds to the perfectly moist texture of these bars, add healthy fats and still allows the banana and strawberry flavors to shine through. They’re sweetened with just bananas and a bit of pure maple syrup, and contain coconut flour for extra fiber and healthy fats. Let’s get to the recipe!

Strawberry Banana Bread Breakfast Bars {Grain Free & Paleo}

Ingredients
- 2 large organic cage free eggs
- 2 med/large bananas overripe, mashed
- 2/3 cup creamy cashew butter
- 2 and 1/2 tbsp pure maple syrup grade A, divided
- 2/3 cup organic coconut flour
- 1/2 tsp baking soda
- generous pinch fine grain sea salt
- 1 and 1/2 cups organic frozen strawberries
Instructions

Preheat your oven to 350 degrees and line an 8 x 8" baking dish with parchment paper.

Prepare the strawberry jam first: In a small saucepan, combine the frozen berries and 1/2 tbsp maple syrup and cook over med/low heat, stirring occasionally to avoid burning, until the strawberries begin to break down. Mash the strawberries with a fork and continue to cook and simmer for about 10 minutes, stirring. Remove from heat and set aside.

In a large bowl, whisk the eggs and mix in the mashed bananas, cashew butter, and maple syrup until smooth and thick.

In a separate bowl, combine the coconut flour, baking soda, and salt.

Slowly add the dry ingredients to the wet and stir to fully combine. The batter will be thick due to the coconut flour.

Transfer the entire mixture to the parchment lined baking dish, scraping the bottom of the bowl. Spread the batter evenly over the dish, then spoon 1/2 cup of the strawberry mixture over the top, and use a toothpick to swirl it throughout the batter.

Bake in the preheated oven for 35-40 minutes, or until the top is lightly browned and a toothpick inserted near the center comes out clean (no batter)

Allow to cool completely, then cut into squares and enjoy!

If I don’t have coconut flour is there another flour I could easily sub in?
The measurements would be quite different so I’m not sure!
