These paleo boneless wings are ridiculously tasty and couldn’t be easier to make! Grain free, crispy and tossed in two ingredient buffalo sauce, then served with ranch, they’re perfect for game day, Super Bowl, parties or a fun dinner!
While I absolutely love my crispy baked buffalo wings, I couldn’t believe I neglected to create a boneless version after all these years!
These boneless “wings” blew my mind. They are OUT of this word delicious and super easy to prepare AND eat, of course!
With the same easy buffalo wing sauce as my original version but with a much faster cook time, I’m very much sold on my boneless version.
I decided to use boneless skinless chicken thighs because they’re my absolute favorite type of chicken to cook. Juicy and NEVER dry, and more flavor than breasts!
That said, if you aren’t into thighs you can definitely use breasts for this recipe!

What You Need To Make Paleo Boneless Wings
This recipe uses simple ingredients that you might already have on hand especially if you do a lot of grain free cooking!
Here’s everything you’ll need for these boneless buffalo wings:
Chicken:
- boneless chicken thighs or breasts, cut into 2″ pieces
- arrowroot or tapioca flour
- blanched almond flour
- salt and pepper
- garlic powder
- onion powder
- smoked paprika
- eggs
- Light olive oil or avocado oil, for frying
Sauce:
- ghee or butter
- hot sauce (I used Franks Red Hot Original)
How To Make Paleo Boneless Wings
Place the arrowroot or tapioca and almond flour in a shallow bowl along with all seasonings.
Whisk the eggs in a separate shallow bowl. Coat the chicken pieces in whisked egg lightly, then toss in the flour mixture, shaking off excess, and place on a plate.
Heat about 1/2 cup of oil in a large deep non-stick skillet. Once sizzling hot, work in batches to cook to cook the chicken pieces, cooking for 3 minutes, turning once or twice.
Place chicken on a paper-towel-lined plate and repeat the process for the remaining chicken, adjusting the temperature of the heat as needed.
Whisk together the melted butter with the hot sauce. Remove the paper towel from the chicken and pour the sauce over the fried chicken to coat.
What To Serve with These Boneless Buffalo Wings
I absolutely love dipping these wings in my homemade ranch dressing!
The recipe for the ranch goes along with my original crispy baked buffalo wings.
I also garnished these with chives for color. They’re great as an appetizers with celery and carrots to dip in the ranch.
Even better, you can make these for an easy weeknight dinner serving with sautéed cauliflower rice and diced cucumber with the ranch drizzled all over!

- 1 teaspoon salt
- 1/2 teaspoon black pepper

- 2 eggs whisked
- Light olive oil or avocado oil for frying (about 1/2 cup)

- 1/3 cup ghee or butter melted
- 1/3 cup + 2 tablespoons hot sauce I use Franks Red Hot Original
