This cake uses avocado, a fruit that provides unsaturated fats and fiber. Healthy eating patterns are associated with improved type 2 diabetes outcomes and avocados are a great fresh-fruit option that contributes 6 grams of unsaturated fats. Unlike most other fruits, avocado contains zero grams of naturally occurring sugar per serving and does not affect the glycemic response.
Data from 6,224 adults revealed that certain metabolic features were strongly linked to avocado intake and formed a reliable biomarker. That biomarker exhibited significant correlations with lower fasting glucose, insulin, and a reduced risk of type 2 diabetes. The study cannot prove causation and is limited by self-reported data and unknown confounders. The Avocado Nutrition Center funded the study.
