Look no further for the perfect easy, chewy sandwich cookie that just happens to be paleo!  These Chocolate Almond Butter Sandwich Cookies have something for everyone, and no doubt will become a new favorite when a cookie craving strikes.

Before diving mouth first into this recipe I could barely wait until today to share, I have a quick running update (since Mondays are typically when I talk running.  I am 100% planning to continue my usual Monday training updates as soon as I start actually training again.)

I decided to go for my first run since getting sick on Saturday (9 days total off.)  I was thinking either 4 or 5 miles depending on how I felt, and it most definitely had to be 4.  While I didn’t feel horrible – and actually my legs felt pretty good – my cardio/breathing was feeling off, which totally makes sense since I had a chest infection, and I’m taking it as a sign that I shouldn’t push it.  I also had a pretty bad coughing fit when I got home.  I DO feel a ton better than I did just days ago, but running is just another story I suppose.

So after that, I didn’t run Sunday but did 30 minutes of yoga instead, which is finally starting to feel okay for my sinuses.  Anyway, it’ll be slow coming back, but hopefully by next Monday I’ll have good things to share in the fitness department.

But let’s get back to these chewy almond butter sandwich cookies – trust me – you’ll want to.  After making these on Friday, I could hardly bear to wait another minute before sharing the recipe – it’s THAT good – promise.

Oddly, I made them on a whim, after looking at some of my recipe ideas and not feeling so enthusiastic about them (why does that happen?!) all I could think about was sandwich cookies, so I worked with what I had around and magic DID happen!

But don’t worry, things are not always happy sunshine ponies with my baking. As I’m typing this I already had one miserably failed recipe this morning involving bananas, chocolate, and cranberries.  So things do not always go so well in the kitchen, but, when they fail and we are pathetically licking up the remainders from the baking dish, wishing with every bite we can change the results from bad to good, it’s recipes like these Chewy Chocolate Almond Butter Sandwich Cookies that give us hope for the next time!

So yes, I’m soothing my recipe heartbreak by reminding myself that I CAN BAKE GOOD THINGS.  Moving on, let me tell you all the good things about this one!

Almond butter and chocolate chips for sandwich cookies

To start, I made a super simple chewy almond butter cookie, which sort of tastes like an old school peanut butter cookie to me.

I adapted the recipe from the best chocolate chip cookie recipe I’ve made – my Ultimate Paleo Chocolate Chip Cookies – because I figured it would be hard to go wrong with that as my guide!

While those were cooling, I made the easiest filling using just two ingredients.  Then of course, I filled the cookies.  Seriously, the entire recipe from start to finish took me about 40 minutes, including the cooling time and assembling the sandwiches.  In sandwich cookie land, things just don’t get any easier than that.

Chewy Chocolate Almond Butter Sandwich Cookies {Paleo}

These Almond Butter Chocolate Sandwich Cookies have something for everyone, and no doubt will become a new favorite when a cookie craving strikes. Rich chocolate almond butter filling between two chewy grain and dairy free almond butter cookies - ultimate chewy paleo sandwich cookie!

Ingredients

For the Cookies:

  • 1 egg
  • 3/4 cup smooth almond butter
  • 1 tbsp organic coconut oil
  • 1/2 cup organic coconut sugar
  • 1 tsp pure vanilla extract
  • 1 cup blanched almond flour
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt

For the Filling:

  • 1/2 cup Enjoy Life mini chocolate chips or preferred dairy free brand
  • 1/4 cup smooth almond butter
  • 1/4 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350 degrees and line 2 baking sheets with parchment paper
  2. In a large bowl, whisk the egg with the 3/4 cup almond butter, coconut sugar, vanilla, and coconut oil
  3. In a smaller bowl, combine the almond flour, baking soda and pinch of salt

  4. Add the dry mixture to the wet and mix until a thick cookie dough forms (you can mix the dough with your hands, a spoon, or an electric mixer if you need to)
  5. Roll dough by 1 tbsp each into balls and flatten completely to 1/4" thickness, then place on the parchment lined baking sheet. Dough will feel greasy but not sticky - don't worry, the cookies are not at all greasy once baked.
  6. Continue to roll into balls and flatten until all the dough is used up, placing cookies an inch apart on the baking sheets.  I usually make 15 sandwich cookies total so 30 (half) cookies will go in the oven.

  7. Bake in the preheated oven for 10 minutes or until dry and set. Remove from oven and allow to cool for a minute before placing on wire racks to cool completely.

  8. While the cookies bake, make the filling. In a small saucepan* over very low heat, melt the chocolate chips with the almond butter while stirring. As soon as the chocolate melts, remove from heat, stir in the vanilla and continue to stir until smooth. Set aside and allow to cool**
  9. Once the cookies and the filling have cooled, it's time to assemble the sandwich cookies! The filling should be of spreadable, but not liquid consistency for this part, sort of like a thick frosting. If it cools too much, you can heat it a small amount while stirring to melt it to the right consistency.
  10. Using a spoon, take 1-2 tsp of filling and place on the bottom (flat side) of a cookie, then place another cookie on top of it with the flat side down (facing the filling) Press down a bit to spread the filling, and repeat with the remaining cookies. This recipe made 11 sandwich cookies for me.
  11. Serve with your favorite non-dairy milk for dunking, and enjoy!

Recipe Notes

*You can also melt the chocolate chips with the almond butter in the microwave, using a microwave safe bowl

**You can place mixture in the refrigerator for faster cooling. If it hardens/cools too much, just heat gently and stir back to spreadable consistency.

    Totally love the looks of this recipe! I did end up baking 3 different kinds of cookies on a whim for dinner last night! It was one of those baking moments where I didn’t pay attention and just made quick batches which all came out amazing. I was reminded that I love baking and I love making up my own recipes which makes me wonder why I bother to pin recipes lol.

    I made your chocolate chip muffins yesterday ! These cookies look great. When I was sick over the summer it was tough to get back to running normally- for a few weeks I was running with tissues and an inhaler even though I felt ok during the other parts of the day.

    So glad that you were finally able to get back out there and run! I am getting to the point where I don’t even know what that feels like, haha. I had plans to back and do such things, but ultimately, I’m trying to keep myself off my feet as much as I can. These look amazing!

    Ooo me me me! I baked this weekend! I was [mostly] successful, but I did have to remake a batch of snicker doodle cookies because I ended up putting a little TOO much cinnamon and sugar on the outside, so they came out looking a little too dark. Tasted great, but… sigh… there’s blog pictures to think of 😆

I used the plain version but you can go double-chocolate with their chocolate flavored collagen!I add their collagen protein to my coffee daily for the bonus skin and joint benefits plus extra protein 👍Here’s the recipe for the best paleo mocha latte!
Makes 2 servings
10 oz strong brewed coffee, hot (or espresso, if preferred)
1 cup almond milk, or nut pods creamer, heated in the microwave or a saucepan
2 Tbsp raw cacao powder
2 Tbsp maple sugar (or coconut sugar)
2 scoops Ancient Nutrition Multi Collagen Protein (use the chocolate flavor for double chocolate!)
1 1/2 tsp pure vanilla extract optional
Extra cacao powder or shaved dark chocolate for garnishAdd the prepared coffee or espresso, the milk or creamer, cacao powder, maple sugar, collagen, and vanilla to a blender and blend until all is dissolved, then continue to blend until frothy.  Divide between 2 cups and garnish with extra cacao powder or shaved chocolate if desired.  Enjoy!
