These classic paleo burgers taste just like the real deal but are made with better-for-you ingredients! Juicy grass-fed beef patties, grain free buns, a dairy-free, refined sugar free and soy free burger sauce and thick cut bacon make these the best loaded paleo burgers you’ll try.
As much as I love my burger bowls and lettuce wrapped burgers, there’s just something about a juicy burger on a bun!
Which is why I came up with the best paleo burger buns last week. I tried several times to get the right texture and covered all the bases with those buns!
Because a bun isn’t much without a burger, of course I had to follow up with the best paleo burgers, complete with an easy burger sauce that you can whisk together in seconds.
Between the juicy grilled burger, paleo buns, sauce, and thick cut bacon, I know you’ll agree this recipe is just paleo burger heaven!
What You Need to Make the Best Paleo Burgers
See my one-bowl Paleo Hamburger Bun Recipe for the buns ingredients. Here’s what you’ll need to prepare the burgers:
- 5 Paleo Burger Buns
- paleo mayo (homemade or store bought)
- mustard
- paleo ketchup (I used Primal Kitchen)
- coconut aminos
- dill pickle relish
- onion powder
- garlic powder
- hot sauce (optional)
- avocado oil
- grass-fed ground beef, 80% lean
- garlic, minced (optional)
- coarse sea salt and black pepper
- bacon, (I used thick-cut) cooked until crisp
- sliced dill pickles (no added sugar)
- red onion
- sliced tomatoes
- lettuce
How to Make the Best Paleo Burgers
Have the burger buns baked, cooled and sliced before beginning.
Cook the bacon to preference first, drain and set aside. To make the sauce, whisk together all ingredients in a medium bowl until well combined. Adjust any seasonings to taste.
Shape your burgers. It’s important not to overwork the meat while shaping so the burgers stay juicy! I don’t like adding much more than sea salt and pepper to my burgers – a little minced garlic is an optional add-in.
Shape 5 patties (1/4 lb each) so they’re about 1/4-1/2” thicker around the perimeter than the inside – this will help prevent the burgers from puffing up in the middle. My burgers were about 3/4″ thick on the outside. Sprinkle with sea salt and black pepper as you shape them.
The burgers can be grilled or pan-fried. Preheat your grill or skillet to medium high heat and brush with oil. Cook for a total of 5 minutes for medium rare and 6-7 minutes for medium. The total time will depend on the exact thickness of your patties and the heat of your stovetop or grill. Use a meat thermometer to be more exact about the timing for your desired doneness.
Tips for Grilling Juicy Burgers
Assuming you’re already using 80% lean beef, I find two things mot important in grilling juicy burger. First, getting your grill HOT and brushing it with oil. This will ensure the juiciness is sealed inside while the outside is perfectly charred.
Second, it’s important not to overwork the meat while shaping! I don’t like adding much more than sea salt and pepper to my burgers – a little minced garlic is an optional add-in.
Related to this – don’t press down on the burger while cooking! This squeezes out the juices and will lead to drier burgers.
My Favorite Paleo Burger Toppings
Isn’t topping burgers a huge part of the fun of EATING burgers?!
I like to start off with a slather of sauce on the bottom bun, followed by lettuce, tomato, onions, pickles, bacon, the burger patty, and more sauce. If you prefer grilled onions over raw that would be delicious too!
Feel free to layer the burgers however you like, but I recommend using the sauce on both the top and bottom buns for the best flavor. Make sure to serve them right away and enjoy!

Ingredients
Sauce:
- 1/3 cup paleo mayo
- 2 Tbsp mustard
- 2 Tbsp paleo ketchup
- 1 Tbsp coconut aminos

- 1 1/4 lbs grass-fed ground beef 80% lean
- 2 cloves garlic minced (optional)
- Coarse sea salt and black pepper
- 6 slices bacon (I used thick-cut) cooked until crisp
- Sliced Dill Pickles no added sugar
- Thinly sliced red onion
- Thinly sliced tomatoes
- Lettuce

*Prepare the paleo burger buns beforehand. My recipe makes 10, you can freeze the remaining buns for later. You can also make the recipe ahead of time, thaw and reheat to use in this recipe. Prep time does not include the time to make the buns.
