Orange Coconut Butter Cookies {Paleo, Nut Free}

These paleo orange coconut butter cookies have a soft shortbread-like texture and tons of sweet citrus flavor!   They're made with coconut butter and coconut flour, so they're grain free, gluten free, dairy free and nut free.  These addicting cookies are kid approved and delicious with a coconut maple icing!

Instructions

  1. Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.
  2. Make sure all ingredients are as close to room temperature as possible - if your eggs are cold, let them sit in a bowl of hot water for a minute.
  3. In a medium bowl, combine the coconut flour, tapioca or arrowroot, baking soda and salt, set aside.
  4. In a separate large bowl, whisk together the coconut butter, maple syrup and sugar, eggs, orange juice and zest, and vanilla extract until very smooth.
  5. Using a silicone spatula or wooden spoon, stir the dry ingredients into the wet until fully combined, then allow the mixture to sit for a few minutes so the coconut flour absorbs the liquid. You most likely won’t need to chill the dough.
  6. Roll dough into 16 balls and place on the cookie sheet an inch apart (they won’t spread) Flatten each one a bit into a “cookie” shape (see photo) before baking.
  7. Bake in the preheated oven for 8-10 minutes until just set and tops are “cracked” - remove and allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the optional icing, combine the melted coconut butter and coconut sugar in a small bowl, adjusting the sugar to taste. Drizzle over cooled cookies as desired - icing will harden at room temp. Store leftover cookies in an air tight container in the refrigerator - they’re very good cold!
