No-Bake Paleo Cookie Dough Bites with Protein

These tasty no-bake Paleo cookie dough bites are made with real-food ingredients, sweetened with dates and bananas and pack a punch of Paleo friendly protein along with the taste and texture of chocolate chip cookie dough!

Ingredients

  • 1 medium banana ripe (doesn’t have to be overripe)
  • 2 medjool dates softened if necessary (drain excess water if you soften them first)
  • 1/2 cup smooth almond butter or cashew butter
  • 1/4 cup Perfect Paleo Powder Cacao Flavor (Vanilla is fine as well)
  • 1/4 cup + 1 Tbsp coconut flour*
  • 1/4 cup dairy free soy free mini chocolate chips

Instructions

  1. Place all ingredients EXCEPT coconut flour and chocolate chips in a high speed blender or food processor, and blend until creamy.
  2. Stir in coconut flour until fully combined, then stir in chocolate chips.
  3. Allow mixture to chill in the refrigerator for 15 minutes until you’re able to roll into balls. Roll dough into 14-16 balls and serve right away, or store in a covered container in the refrigerator until ready to eat. Enjoy!

Recipe Notes

*If after chilling your mixture is still too sticky to roll, add just a tsp more of coconut flour and allow to chill again. A little bit goes a long way!
