To make the fries, preheat your oven to 425 degrees and line a large baking sheet with parchment paper. In a large bowl, toss the cut sweet potatoes with the olive oil, salt, paprika, and chipotle pepper until evenly coated.

Arrange the sweet potatoes in a single layer on the baking sheet with enough room around each one (no touching) to ensure crispy fries.

Roast in the preheated oven for 20 minutes, flip (or shake the dish a bit) and continue to roast for another 15-20 minutes or until browned and crispy on the outside.

While the sweet potatoes are roasting, prepare the bacon and eggs. I like to fry my eggs in bacon fat sunny side up, but cook yours however you prefer.

When the fries are done, top with crumbled bacon, quartered cherry tomatoes, diced or sliced avocado, chopped fresh chives and cooked eggs. Drizzle with a bit of hot sauce if you choose. This will make 2-3 servings depending on how hungry you are! Enjoy any time of day!
