Spicy Deviled Eggs with Sriracha Mayo {Paleo}

Ingredients

  • 6 eggs hardboiled and cooled
  • 1/2 cupeasy homemade paleo mayo or Primal Kitchen mayo
  • 1 tsp Paleo friendly sriracha sauce - I used this brand
  • 1/2 tsp fresh lime juice
  • Cooked and crumbled Paleo friendly bacon*
  • Thinly sliced green onions or fresh chives*
  • Extra sriracha to drizzle*

Instructions

  1. Slice each hardboiled egg lengthwise and remove the yolks. Discard 2 or repurpose, and put the remaining 4 yolks in a mixing bowl and mash well
  2. Combine the Paleo mayonnaise with the sriracha and lime juice. Add the mayo to the mixing bowl with the mashed yolks and whisk together until well blended, or use an electric mixer until it's very smooth.
  3. Spoon the yolk mixture into the hardboiled egg white halves evenly to fill each one. Sprinkle any add-ons over the top such as cooked crumbled bacon, green onions or chives, and an extra drizzle of sriracha for spice.
  4. Serve and enjoy! Store any leftovers tightly covered in the refrigerator for up to two days.
