Ingredients
- 1 cup dates pitted and softened*
- 1/3 cup creamy almond or cashew butter - I used a combination based on what I had!
- 1/2 cup cooked and mashed or pureed sweet potato you can use canned if you prefer
- 1 tsp pure vanilla extract
- 1/4 tsp cinnamon
- pinch salt
- 7-8 Tbsp organic coconut flour**
- 1/3 cup Enjoy Life mini chocolate chips or your favorite brand
Instructions

Add your dates to the bowl of a food processor and process on high until a paste forms (pulse as needed)

When the dates form a paste, add the mashed sweet potato, nut butter, vanilla, cinnamon and process until blended.

Stir in 7 Tbsp of the coconut flour until a thick dough forms, then chill the dough in the freezer for 20 minutes

Remove from freezer, and if the dough is still very sticky, stir in 1/2-1 Tbsp more of the coconut flour.

Lastly, stir in the mini chocolate chips, then roll the dough into balls or cookie shapes. They will have a cookie dough-like texture and are best stored in the refrigerator. Enjoy!
Recipe Notes
*If your dates are dry, microwave them in a bowl with waterer 30 second, then drain before adding
**You will slowly add the final Tbsp at the end, after chilling, if the dough is too sticky
