Easy Salmon with Crispy Roasted Lemon Dill Potatoes and Brussels sprouts that makes a great complete and convenient Paleo seafood dinner that’s ready in 30 minutes!
It’s no secret lately that easy, convenient and quick dinners are the only way I roll on weeknights. The kids’ activities in the afternoon/evening mean that I either make a slow cook meal, or I make something that takes 30 minutes from start to finish, preferably in the oven so I can use the time to catch up on life while the oven does the my cooking!
This recipe is really sort of a “real-life-meal” for us, AKA, it’s what dinner looks like at least a couple of times per week. Roasted potatoes, veggies, and a protein! The protein winds up being the key for me as to how easy/quick the cooking will be. This is one reason I’ve added fish to the rotation recently – specifically Bumble Bee SuperFresh® seafood! My kids are finally warming up to salmon, which makes me one happy seafood-loving momma!
Since Emily and Drew (7 & 5) still eat “kid sized” portions, 2 packages of the Bumble Bee SuperFresh® seafood feed our family of 5 perfectly. For the purpose of this recipe I only used one package which contains two servings, but if you needed to double up you would simply follow the same instructions with the second package as well. The potatoes and brussels sprouts are really enough for 4 people as written in the recipe.

You simply slip the Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil into its own parchment (included) and let your oven do the rest. I saved the other package I received to make for lunch – it’s that easy – and delicious!
For this meal, the potatoes roast for about 30 minutes (I cut them small to make sure they cook fast!) and the salmon and brussels are prepared right after the potatoes start roasting. You can adjust oven times as needed for the potatoes and brussels sprouts and keep the temperature at 425 F – EASY! The timing of all 3 parts of this meal works perfectly so everything is done at just about the same time.

Easy Salmon with Crispy Lemon Dill Potatoes and Brussels Sprouts {Paleo}
Ingredients
- 1 package Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil
For the Potatoes:
- 1 lb baby red potatoes scrubbed and quartered
- 1 Tbsp fresh lemon juice
- 1/4 tsp dried dill
- 1/4 tsp garlic powder
- 1 Tbsp olive oil
- salt and pepper to taste
For the Brussels Sprouts:
- 3 cups brussels sprouts tops removed and cut in half
- 2 cloves garlic mined
- 1 Tbsp olive oil
- Sea salt to taste
Instructions
- Preheat your oven to 425 degrees and line 1 baking sheets with parchment paper and another half with parchment paper (the other half is for the salmon.)
- In a large bowl, toss your quartered baby red potatoes with the olive oil, lemon juice, garlic powder, dill, salt and pepper to evenly coat. Spread out the potatoes in a single layer on one baking sheet and roast in the preheated oven, on a lower rack, for 30 minutes or until nicely browned and crisp, shaking/turning once midway for even roasting.
- Right after putting the potatoes in the oven, prepare the salmon according to the package directions (in the parchment packets provided) then place on the other baking sheet.
- Now, toss the Brussels Sprouts with the olive oil, salt and minced garlic, and arrange next to the salmon packets on the side of the baking sheet you lined with parchment paper. Place in the oven on the middle rack and roast the salmon according to the package instructions and the brussels sprouts until soft and browned (I roasted both for the same amount of time.)
- Arrange the salmon, brussels sprouts and potatoes as desired and serve hot!
