A healthy grilled shrimp salad with avocado, bacon and tomatoes with a savory, smoky dill sauce made with ghee or grass fed butter. Gluten free, Paleo, low FODMAP, and Whole30 friendly!
So many sweet recipes have been going down in my house lately, so this smoky, savory grilled shrimp salad is exactly what I need to post about today!
As much as I love dessert, I totally have a daily limit of “sweet foods” that I can tolerate before I’m desperately searching my fridge for things like cold leftover chicken and olives.
If I happen to have a can of tuna or sardines I’ll bring that out too. No, I’m not joking. After a berry crumble for breakfast (recipe!) and ice cream for snack, my body takes over and forces protein on me in any shape or form available.
It’s not quite the desperation of a pregnancy craving but pretty close to it, if I remember correctly. Actually, if I force myself to remember pregnancy correctly all I will see is myself with no feet, surrounded by multiple bacon egg and cheese everything bagels, spicy curly fries, plus pretzels with mustard and pickles for dessert. That is really not a joke, although to be accurate I also ate one grilled cheese tomato and bacon sandwich per day alongside the fries.
Okay, but this is not that. No, this is a very healthy yet equally satisfying (maybe not for the preggos, but still) smoky grilled shrimp salad that does not resemble my pregnancy diet at all, except for the bacon. Some things happily last forever – sickness and health, richer or poorer, as long as bacon and I shall live.
So, a couple of notes on the recipe now. I divided the sauce in half and used some as a marinade (a quick one) and the rest to pour over the shrimp after cooking. You can easily double the amount of sauce and shrimp you need based on how many you’re serving.
You can either grill the shrimp or cook in a heavy pan, like my beloved cast iron, with the same result. For this recipe to be Whole30 compliant, make sure you use ghee (clarified butter) which is made from butter but contains no dairy protein (casein.) This means if you’re not strictly avoiding dairy or doing a Whole30, good quality grass fed butter can be used in place of it.

Smoky Dill Grilled Shrimp Salad {Paleo & Whole30}
Ingredients
- 1/4 cup ghee clarified butter or grass fed butter* melted and cooled slightly
- 1/2 tsp fine grain sea salt
- 1/8 tspground chipotle pepper or black pepper
- 1/4 tsp smoked paprika
- 1/2 tsp dried dill
- 4 slices sugar free nitrate free bacon cooked until crispy and crumbled
- 12 oz medium shrimp shells removed, deveined and ready to cook
- Your favorite mixed fresh greens
- 1/2 medium avocado
- Large handful cherry tomatoes halved
- Fresh chives or scallions for garnish
Instructions
- Whisk together the ghee, salt, chipotle pepper, smoked paprika and dill and divide the mixture in half, set aside one half for serving.
- Put the uncooked shrimp in a bowl and cover with half the ghee mixture, cover, and set aside in the refrigerator for one hour.
- When it's almost time to cook the shrimp, assemble the salad ingredients and set aside, chilled
- To cook the shrimp, heat a grill or cast iron pan over med-hi/hi heat (depending on your grill), give your shrimp a final coating of marinade and place on the grill.
- Cook 2-3 minutes on each side or until opaque (cooked through)
- Whisk together the remainder of the melted sauce in a bowl and toss the cooked shrimp in it before adding to the salad.
- Serve warm and enjoy!

Yes to needing something savory after too many sweets! If I have an indulgent dessert one night i usually wake up the next day not wanting to eat anything sweet for breakfast,even fruit. Hope you have a great weekend!

This salad looks so good! I love shrimps, avocado, dill, etc. Will try it for sure. I have been craving salad almost everyday this summer, but I do need a good dose of protein in it to keep me satisfied for hours: smoked salmon, tuna, chicken, shrimps… Pretty easy to prepare and bring to work so it’s all good! I’m pretty sure that I ate more burgers in the 9 months I was pregnant with my son than I did my entire life. And he loves burgers! I was also craving ice cream but that one never really went away haha I’m Canadian so today is our day! Visiting family for the long week-end! Have a great week-end Michele!

I’ve been craving a lot of salads lately too! It’s just too hot to eat anything else. No plans for me this weekend I’ve got two weeks of homework to get done & I think I’m coming down with a cold. 🙁
