This is one super easy and quick weekday morning Paleo breakfast you’ll keep coming back to! A single serve Plantain Apple Chicken Sausage Hash that’s just as delicious as it is nourishing, with sweet caramelized plantains and apples, savory-sweet chicken sausage, and eggs cooked to your preference! Dairy free, Paleo, Whole30 approved.

And so was born this breakfast hash. Okay, clearly I eat this sort of thing all the time, so it’s not as if we’re breaking new ground with this recipe, but, sometimes the good, easy and quick recipes that you make a version of every day, are also the easiest to overlook or take for granted!
So, I’m bringing you this deliciously simple Plantain Apple Chicken Sausage Hash as a quick, single serve, Paleo and Whole30 friendly meal that you can make any weekday morning in the time that you could microwave oatmeal and add a banana to it. Really, it’s (almost) that fast! It also makes an awesome “breakfast for dinner” meal when you’re exhausted and just want to move on to the chocolate as fast as possible.

Believe me, I have mad love for sweet potatoes (especially the Japanese variety) and cook them in a hash with bacon pretty often, but they do take longer to soften and cook through, so some busy mornings it’s just not possible.
But, ripe plantains are different. They are already ripe, sweet, and soft and only take about 2 minutes to caramelize into a gorgeous golden brown when cooked in coconut oil, butter, or ghee and a bit of salt. Apples are about the same in their cooking time for a good tender/crisp texture, so they work perfectly together in this recipe! Toss in diced, fully cooked chicken apple sausage and you have a very easy and tasty combo.

Plantain Apple Chicken Sausage Breakfast Hash {Paleo}

Ingredients
- 1/2 of a large ripe plantain (skin should be yellow/brown) cut into bite sized pieces
- 1/2 of a medium apple chopped
- 1 link chicken apple sausage chopped (I used Aidell's brand which is Whole30 compliant)
- 1 tbsp coconut oil or ghee for cooking the hash
- 1/2 tbsp coconut oil or ghee for cooking egg s
- salt to taste
- 1-2 eggs
Instructions

Heat a small-medium skillet over medium heat and add the coconut oil or ghee.

Once heated, add the chopped plantains and apples to the pan and sprinkle with a bit of salt if desired. Cook and stir to evenly brown.

After one minute, add in the chopped chicken sausage and continue to cook, stirring to cook all the ingredients evenly. Adjust the heat if necessary to avoid burning. Once toasty brown, remove from heat.

Meanwhile, heat a separate small nonstick skillet over medium heat, and add the 1/2 tbsp coconut oil or ghee to cook your eggs.

For perfect fried eggs, I crack mine into the heated pan and allow them to fry until the bottom is crispy golden brown, about a minute. Then, I cover the pan and turn off the heat for a few minutes, so the eggs steam cook on top. This way, the whites fully cook and the yolks don't overcook.

Serve alone or over baby spinach, and top with eggs. Enjoy!

I’m really starting to fall in love with plantains lately. They’re relatively cheap for how many servings you can get by just pan sauteeing them! The flavors of apple with sausage sound fantastic with them.
